Banana Breakfast Muffins


Bananas either get scoffed in our house, or left until they're so black you don't know whether they are bananas or fossils from the Ice Age.

My remedy for this is the humble banana bread which works for all those forgotten bananas in a cinch, but this weekend I decided to whip up some breakfast muffins for the week to ensure Sam and I at least each something healthy before the work day. So sayonara, chocolate flapjack bar. Adios, crisps before 11am.

Banana Breakfast Muffins

2 - 3 over-ripe bananas, mashed
1/3cup butter, melted
1 egg, whisked
1/2 cup white sugar
1/4 cup brown sugar
1 tsp vanilla extract
1 tsp baking powder
1 1/2 cup flour
Pinch of salt
Handful of berries, covered in flour
1/3 oats, divided

1. Preheat your oven to 175c
2. Smash your bananas in a large mixing bowl, and stir the melted butter into the banana
3. Add the egg and combine
4. Add each sugar and stir into the banana mixture
5. Stir in the vanilla, salt and baking powder and combine
6. Add the flour 1/2 cup at a time until it forms a runny batter
7. Stir in the flour covered berries until evenly distributed

Pop the mixture into a) muffin cases or b) a greased pan and bake for 30-40mins depending on how good your oven in. Cool on a rack and store in an airtight container, and they'll keep for the entire week!
